Directions:
1 if using sweet potato, wash and prick several times to vent steam. Baked directly on rack at 450° for 45 to 65 minutes. Peel, mash and set aside.
2 Melt . Lightly beat .
3 In a small mixing bowl, combine ,,,. Beat until blended.

5 Preheat waffle iron.
6 Pour batter in center of waffle iron and bake until done, about 3 minutes.

Using canned sweet potato purmade the recipe easy to make but was too loose and the waffle fell apart. Next time try 2 oz of milk.

    Waffle overdone on outside and underdone on inside.

This time we used canned southern yams instead of fresh to save an hour of preparation time baking the sweet potato. It was worth the change. We also used all beached flour because ShopRite wheat flour was only available in large bags and expired within two weeks. Either because of these changes or because I poured too much batter into the waffle maker, the inside was mushy, though still tasted good. Next time limit batter to about 300g.

    Very tasty but a little drier than expected. Canned Sweet Potato would make this much quicker to prepare.
