Tuna Melt on English Muffins
Description:  This recipe makes for an excellent lunch when using a sandwich sized English Muffin. Light mayonnaise helped cut down on the calories to a reasonable total.

Directions

Directions:
1 Minced and soak in cold water for 5 minutes. Drain . Chop and .
2 Grate .
3 In a small mixing bowl break up the with a fork. Toss with the ,,. Add , and season with taste. Stir to combine. Add , if using.
4 Toast .
5 Top with Tuna Salad and then . Place on baking pan under the broiler and heat on low for about 3 minutes, until the cheese has melted. Serve immediately.

Much better with the sandwich sized English Muffin. Still a lot of calories so next time I’ll try the smallest can of tuna fish I can find and reduce the mayonnaise.

The original recipe made two sandwiches, but I halved the ingredients for one. Clearly, there is more tuna salad than could fit in one muffin. Much more leaked out. Next time I’ll use a sandwich sized English Muffin. Light mayonnaise helped cut down on the calories to a reasonable total.
